Keto Coconut Shrimp - Pan Fried or Air Fryer Shrimp Recipe
/Keto Coconut Shrimp is the perfect Keto appetizer or Keto-friendly dinner. You can either pan-fry or air fryer this shrimp recipe, either way, this is an easy low-carb shrimp recipe the whole family, even non-keto’ers will love.
WHAT IS COCONUT SHRIMP?
I scratched my head for a while trying to figure out how do you make low-carb coconut fried shrimp. This coconut shrimp recipe has four main ingredients that are all whole 30 compliant, Paleo, and Keto friendly.
There are great substitutes for ingredients like flour and breadcrumbs so you can easily make your favorite fried foods without the heavily processed ingredients
If you follow Keto, whole 30 or a Paleo diet coconut flour should be a staple in your pantry.
KETO COCONUT SHRIMP INGREDIENTS
I recommend Bob’s Red Mill Organic Coconut Flour because it has no preservatives, additives, or chemicals.
Bob’s Red Mill Organic Coconut Flour is also high and fiber, grain-free, gluten-free. Making it the perfect substitute for regular flour.
The coconut flour doesn’t have a strong coconut flavor, so we still have to add coconut for flavor and of course a nice crispy coating.
You will want to grab some unsweetened coconut flakes. If you have a Trader Joe’s nearby you can find it there, or you can grab unsweetened shredded coconut here on Amazon.
Since the coconut flakes are unsweetened you’ll add a little Lakanto Monk Fruit Sweetener to the coconut flour mixture.

HOW TO MAKE KETO COCONUT SHRIMP IN THE AIR FRYER
I love making these Keto Coconut Shrimp in the air fryer. You follow the same easy assembly directions and then air fry on 380 for about 12 minutes or until they are golden brown.
Making them in the air fryer is super easy and adds a little extra crispiness!
HOW TO PAN-FRY COCONUT SHRIMP
First, you need to heat the coconut oil for frying, so in a medium sauté pan over medium-high heat add about 2 inches of coconut oil.
You want to make sure the oil is hot (about 350 F) before adding the shrimp. If you don’t have a way to check the temperature you can test it by getting your hand wet and flicking the water on the oil, it should kind of sizzle.
Once the coconut oil is hot place your shrimp in the oil and cook for 1-2 minutes on each side, the shrimp cook quickly so don't let them cook too long.
CAN YOU BAKE COCONUT SHRIMP
Yes, I just don’t think they turn out crispy enough. Bake on 400 F the shrimp for 4 minutes. Flip and cook for 5 more minutes until firm and cooked through. Place under the broiler for 1 to 2 minutes until lightly golden.
COCONUT SHRIMP DIPPING SAUCE
The coconut dipping sauce I used is simple just combine the ingredients below
mayonnaise
Sriracha hot sauce
lime juice
granulated monk fruit sweetener or your sweetener of choice
HOW TO STORE BAKED COCONUT SHRIMP
Coconut shrimp is so much better fresh when the breading is fresh and crispy, but if you have leftovers you can store the shrimp in the refrigerator in an airtight container and broil them for 1-2 minutes per side until heated through.
HOW TO FREEZE HEALTHY COCONUT SHRIMP
You’ll want to freeze them in a container that allows them to fit in a single layer, or separate them using parchment paper so they don’t all freeze together.
IS COCONUT SHRIMP KETO
Traditional coconut shrimp aren’t keto-friendly due to the regular flour and sweetened coconut flakes used to create the crispy breading. For this recipe, you will be using coconut flour and unsweetened coconut flakes so that these coconut shrimp are Keto-friendly.

EASY KETO COCONUT SHRIMP

- In a small bowl mix the salt, Monk Fruit Sweetener, and coconut flour
- Create an assembly line of three bowls, one with the flour mixture, the second with the eggs, and the third with the unsweetened shredded Coconut
- Dredge the shrimp in the flour mixture, then in the egg, and finally in the shredded coconut until well coated
- Fill a saute pan about 2 inches with coconut oil and put on medium-high heat
- Once the oil is hot place shrimp in oil and cooks 1-2 minutes on each side. Shrimp cook quickly so don't let them cook too long

- Set air fryer to 380 F
- Cook for about 12 minutes or until shrimp are golden brown
