When I make chopped salad recipes like this I prefer all my veggies to be finely chopped and this veggie chopper gets the job done perfectly.

This Chipotle Chicken Salad is so versatile and can be served so many different ways, makes a bunch for meal prep, and is perfect for sandwiches, wraps, dips, and so much more. You can use mini bell peppers for scooping or toss on a low-carb wrap for an easy low-carb lunch! My favorite low-carb wraps are these Nuco coconut wraps. The only ingredient is coconuts, but they don’t have an overwhelming coconut flavor that goes perfectly with the flavors of the Southwestern chipotle chicken salad.

Here are a few tricks and tips to try when you make this tasty southwest chicken salad.

Let it chill. This recipe only takes 10 minutes to make, and then you can eat it immediately. But it’s even better if you give it some time for all the flavors to meld together in the fridge. If you have the time, let the salad sit in the fridge for an hour or so before you eat it. That will give the chicken time to absorb all the amazing southwestern flavors. The flavors will meld together, and the salad will taste even better.

Add a little extra spice. This recipe has a little kick from the Sir Kensington’s Chipotle Mayo and the fresh onion. But If you’re a lover of spicy foods like me, you can make this a spicy southwest chicken salad by adding fresh jalapeños or canned green chiles to the recipe. You can also add a little heat by adding cayenne powder to the mixture.

CAN YOU FREEZE THIS RECIPE

I don’t recommend freezing this chicken salad recipe. The texture of the fresh veggies and beans won’t be the same when frozen and then thawed.
